Okonomiyaki (Japanese Pancake)

When you get a whole cabbage in your veggie box from Magic Meadow for the week – okonomiyaki is the solution!!

Cabbage is high in fibre, vitamin C, has anti-inflammatory properties and is known for its detoxification properties.?

It’s always good to cook cabbage as it is a goitrogen that can down-regulate thyroid function when eaten in its raw form. I like to always use brazil nuts which are high in selenium when I’m using cabbage to support thyroid function.

Ingredients

  • 6 eggs

  • 2 tablespoons of flour (I use coconut or buckwheat)

  • 2 brazil nuts (crushed, blitzed in a food processor.?

  • 1 tsp of baking powder

  • 1 tablespoon tamari (soy sauce alternative)

  • 1/2 tsp of sesame oil

  • 1 cup of finely shredded cabbage

  • 1/2 leek finely chopped

  • 4 rinds of nitrate free bacon (or olives)

  • coconut oil or butter for cooking

    Method

  • Whisk the eggs, flour, baking powder, tamari and sesame oil well.

  • Add the cabbage, leek, and bacon and mix well.

  • Salt and pepper to taste.

  • Heat oil in a saucepan.

  • Scoop a large spoonful of the mixture into the pan, so there are 4 separate pancakes (depending on the size of pan).

  • Cook for 1.5-2 minutes. Repeat until the mixture is finished.

    Should make 10-15 pancakes.

    Serve with mayonnaise or hummus as a side dish or as a main meal.
